How accurate is the water activity measurement?


Omix utilizes the only internationally recognized method for accurately testing water activity, known as the "Chilled Mirror Dew-Point Method." It works by cooling a mirror in a sealed chamber until condensation forms; the temperature at which this occurs is the dew point, which corresponds to the water activity of the sample.

This is normally a slow process because overshooting will require waiting for the mirror to heat back up. Omix solves this problem by combining data from its sensors to predict the dew point and cooling fast, and slowing down as it approaches the dew point. Omix is accurate to ±0.005 Aw.
