Water activity > Moisture
Water activity rules both safety and flavor. Below 0.60 aw: mold sleeps, beans stay safe for years. 0.60–0.70 aw: danger zone. Above 0.70 aw: mycotoxins incoming. Too low (~0.30 aw) and the delicate acids and sugars that make coffee taste alive start to degrade. Moisture % never tells you any of this. W1 delivers the full 0.000–1.000 aw picture in minutes, anywhere, protecting the bag and the cup.
