Moisture is how much water is in the bean. Water activity is how much of that water is free to move. Only the second one predicts how a lot ages.
Omix Plus measures water activity by chilled-mirror dew point, the reference method rather than a resistance probe estimation, to ±0.005 Aw in as little as 30 seconds.
So a delivery can be checked as it arrives, and checked again in month four to see what your warehouse is doing to it. Two lots can arrive at the same moisture and hold that water differently, and six months on they will not be in the same condition.

Everything you need to get going.
Container A. Green coffee, parchment and dried cherry, about 150 g. Moisture, density, screen size, bean volume, weight and water activity all come from this one.
Container B. Roasted whole beans, about 18 g. Color only.
Container C. Ground coffee, about 5 g. Color only.
Container D. Agtron calibration reference.
Scraper and brush. Leveling is the largest source of drift in density and color. Draw the scraper across the rim so the sample sits as level as possible with the top edge, and do not press it down.
Sample base, toolbox, tempered-glass film, USB-C cable. The main unit and the sample base carry separate batteries and charge together while they are attached.
Calibration solution bottle. Water activity calibrates against a saturated salt solution you make and pour into container B.
